Bacon & Bok Choy

I was recently looking through all 200 of my saved recipes from www.allrecipes.com, (love that site), that I collected over the years prior to becoming primal.  I was curious to see if I would find anything that might fit into my new lifestyle.  Although I didn’t come away with much, I managed to add a few more recipes to the primal stash.  The jewel of the bounty is this delicious dish of bacon and bok choy!

I used to serve this dish over rice but on it’s own it makes a great side dish.  The red pepper flakes give it a bit of a kick, which I love and the bok choy adds a fresh taste in combination with the bacon.  If you’re looking for a new and interesting side dish, I highly recommend this one…

Ingredients

  • 4 slices of bacon
  • 2 pounds of baby bok choy or regular bok choy
  • 1 teaspoon of olive oil
  • 1/2 small red onion thinly sliced
  • 1 tsp red pepper flakes
  • 1 tsp minced garlic
  • salt to taste

Instructions

  • Fry bacon in a large skillet over medium heat until crispy.
  • Remove bacon and drain the fat, reserving one tablespoon of the grease in the skillet.
  • Add the olive oil, onion, red pepper flakes and garlic.
  • Cook and stir over medium heat until the onions are starting to be tender.
  • Add the bok choy, and place a lid on the pan. Let cook for 3 to 5 minutes.
  • Remove the lid; cook and stir until the bok choy is tender but still crunchy, about 2 minutes.
  • Stir in the bacon, and season with salt. Serve piping hot
