Chorizo Omelet

A few weeks ago I went out to brunch with Daniel to one of the two grass-fed beef touting restaurants in the Carefree area.  We both ordered the most delicious chorizo omelet and I’ve been thinking about it ever since.  If you already know how to make an omelet, this is pretty easy to whip up.

The restaurant served this with sour cream which was a great combination with the chorizo.  I decided to make it with goat cheese and it was equally as yummy.  I’m betting this would be great with some chopped and sautéed peppers as well, but unfortunately I have no peppers in my garden yet and I was using what was on hand.


  • 3 eggs
  • 4 oz. chorizo
  • 1-2 oz. goat cheese (or sour cream)
  • Butter
  • Salt & pepper to taste


  • Melt a pat of butter in a medium size frying pan
  • Beat eggs together and pour into pan
  • Cook over low-medium heat
  • While egg is cooking, fry chorizo in a separate pan until completely cooked
  • Just before the egg starts to set, sprinkled cooked chorizo over the top
  • Crumble goat cheese, or spoon the sour cream over the chorizo
  • Gently fold half of the omelet over the other half and serve

*This would also be great served with sliced avocado right on top!
