Nuts are a great snack to keep around and they are perfectly primal which of course is a bonus.  I keep air tight containers of a variety of nuts in our pantry.  They travel well so you can always stash a bag in your purse or car for those occasions when there are no primal/paleo food options available.

Raw nuts are great, but I prefer them roasted with oil and salt…mmmmm.  The only problem is that when I go to the store, and I mean any store, including those “whole foods” stores and farmer’s market stores, all I see is roasted nuts in soybean or canola oil.  Gross!  Seriously, why?  Is it too much to ask that food manufacturers use a real oil once in a while?

Of course, it is a waste of time for me to hope for these guys to get wise anytime soon.  They have fallen victim to the propaganda that these oils are somehow healthy and they are just giving the people what they want…but I digress.  If you want something done right, you’ve got to do it yourself.  The good news is, roasting nuts is a really easy.  Here’s how to do it.


  • 1lb. of nuts of any kind; almond, cashews, sunflower seeds, etc.
  • 2 tbs. olive oil
  • Salt to taste


  • Preheat oven to 350
  • Put nuts in a bowl and drizzle olive oil over the top and mix until they are all evenly coated in oil
  • Add salt to taste
  • Spread nuts out evenly in a large glass baking dish (I use a 9×12)
  • Bake for 15 minutes, stir and bake for an additional 5 minutes or until golden brown (be sure to watch them because they can burn easily)
  • Remove from oven and spread on a piece of parchment paper or paper towel to dry and cool
  • Put nuts in an airtight container once they are completely cooled
